Wild celery can be found throughout Europe, the Mediterranean, and parts of Asia. The leaves, stalks, root, and seeds can be eaten. In western cuisine, the stalks of its domesticated cousin are commonly used in cooking and may be eaten raw alone or in salads, or as a cooked ingredient in various recipes.
Orally, celery seed has been used medicinally for thousands of years. During ancient times, Ayurvedic medicine used celery seed to treat colds, flu, water retention, poor digestion, various types of arthritis, and certain diseases of the liver and spleen. Today, celery seed is used primarily as a diuretic and to treat gout, arthritis, and to help reduce muscle spasms, calm the nerves, and reduce inflammation. Studies suggest that celery seed extracts may help lower blood pressure and cholesterol, protect the liver, and relieve arthritis and especially gout.
